Bugs Bunny Bread

I keep trying to find this recipie for myself, so I'll just post it here so I can find it.  (Do you know how many times I've stopped by my blog to find the recipie for Mint Stick Brownies?)

This is a recipie for what my family calls "Bugs Bunny Bread."  I'm sure we should just call it "Carrot Bread" or something boring like that since it's not a Looney Tunes product.  :)  You can name it that in your cookbook.  My older sister made it for 4-H competition.  And I did.  And each one of my successive siblings.  And it always gets top ribbons.  So here we go:

Bugs Bunny Bread

1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1 2/3 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups finely grated carrots
1/2 cup raisins
1/2 cup chopped pecans, optional

Instructions:

Preheat oven to 350°F. Lightly grease bottom only of one 8 1/2 x 4 1/2-inch loaf pan.

In large bowl, beat brown sugar, granulated sugar and oil 1 minute.  Scrape bowl. Add eggs one at a time, beating well after each addition.

Sift together whole wheat flour, soda, salt, nutmeg, and cinnamon. Stir into bowl mixture just until dry ingredients are moistened. Fold in carrots, raisins and pecans.

Pour batter into prepared pan. Bake for 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan.

Cool completely on wire rack.

A 'Loonies Toons' endorsement is appropriate for all missionaries! I'm just a bit perplexed on which 'Toon' you and Greg would be?
Perhaps you can post a survey and for what it's worth, I'm voting for 'The Road Runner!'

You're right on, Pastor Jay! When Greg and I were courting (and even now), we joke about me being the Road Runner and Greg being Wiley Coyote! Except in this case, Wiley Coyote caught his prey! :)

Maybe with all our travel now, that makes us both Road Runners! :)
